Coil whisks are ideal for cooking sauce or gravy. The angle at which these whisks are constructed are meant for shallow pans.
The classic design is essensially one wire coiled around a base. There are many different versions of this tool, but they all are useful for liquids in shallow pans.
How to use a Coil Whisk
Place coil whisk into pan and stir.
Whisk slowly along edges to make sure gravy or sauce is heated evenly.
Strike whisk against pan edge to remove excess gravy.
Use whisk in some clear water for easy pre-cleaning.
What to look for when you buy:
Coil whisks are made by lesser known brands than the ones we are used to in the United States.
As such, you likely won't find your favorite brand for this type of whisk. On the plus side however is that you can find the cheapest one and go for it. Most of the choices you see for sale will essentially be the same (stainless steel).
